Ingredients:
Ladies Finger - 5
Curd - 1 cup
Salt to taste
For tempering:
Mustard Seeds - 1 tsp
Urad Dal - 1 tsp
Red Chilly - 1
Method:
- Vertically cut the ladies finger into long pieces.
- Add 1 or 2 tsp oil and coat the pieces with the same.
- Place in a microwave safe thick bottomed dish and microwave on high for 3 to 4 minutes.
- Take care not to burn the vegetable. Once done, it will reach a crisp and roasted state.
- Add the curd.
- Heat a tsp oil in a small kadai. Add mustard seeds and when they crackle add the red chilly (split into two) and the urad dal.
- Roast well and add to the curd - ladies finger mixture.
- Add salt to taste.
Its a really yummy raita that has a lovely flavor from the ladies finger. Btw this is purely my own experiment and did not get it from any book, website, mom or mil :)
If one does not have a microwave, deep frying the ladies finger should be fine. I have not actually tried that method.
